Gizzard is a popular food choice for many in Cameroon, enjoyed by people of all ages. However, this tasty chicken part might be hiding some serious health risks. Recent research has shown that gizzards can contain harmful substances like mycotoxins and heavy metals. The study looked at gizzards from chickens raised in three different regions of Cameroon. They tested for two types of mycotoxins, aflatoxins (AFT and AFB1) and ochratoxin A (OTA), as well as several heavy metals including chromium, nickel, arsenic, cadmium, lead, and mercury. The findings were concerning. All the gizzards tested had some level of mycotoxin contamination. The amount of aflatoxin varied, with the highest levels found in the West region. Heavy metals were also present, with cadmium, chromium, and mercury being the most common. The research also looked at how much gizzard people eat and the potential health risks. Adults and the elderly were found to be more exposed to mycotoxins, while children faced higher risks from heavy metals. The levels of these contaminants could pose serious health risks, especially for children. This study highlights the need for better monitoring and regulation of chicken products in Cameroon. It's important for people to be aware of these potential risks and for authorities to take action to ensure the safety of our food.
