Mandarin Peel Power: Stable Bioactives for Future Foods

Citrus peels are usually thrown away, but they contain compounds that may benefit health. A team of scientists decided to capture those benefits in a stable, usable form. They chose mandarin peels and set out to protect their active ingredients through microencapsulation.

The researchers tested two main techniques: ionic gelation and freeze-drying. Their mixture included sodium alginate, maltodextrin, gum arabic, and a small amount of aloe vera powder. The formula aimed for a 20:80 ratio of core to wall material. They varied the amounts of maltodextrin and gum arabic, keeping the total at 2%. Ionic gelation produced calcium-alginate beads that were compatible with the body but did not hold the active compounds as well. One version, IG4, with 1.5% maltodextrin and 0.5% gum arabic, performed best in that group.

Freeze-drying, especially when combined with ultrasonic waves, significantly improved how much active substance stayed inside the particles. It also preserved polyphenols and antioxidant activity. The FD4 formula came out on top. Release tests showed a pattern tied to pH, with more coming out in the stomach phase. FD4 and another formula, FD5, offered better protection during digestion. When stored, the formulas followed a kinetic pattern, and FD4 had the longest shelf life. These methods turn citrus waste into a potential source for functional, antioxidant-rich food ingredients.
