That charred steak or crispy chicken skin might be doing more than just tasting good. New research shows the cooking methods people love could actually speed up aging in their bodies. Scientists call these culprits advanced glycation end products, or AGEs. These tricky compounds build up over time when sugars in the body mix with protein and fat.
Here is the scary part. AGEs do not just appear from eating grilled foods. They also form naturally as people get older. The buildup makes collagen in tissues turn sticky and stiff, which leads to all kinds of health trouble. Doctors connect AGEs to inflammation, brain issues like Alzheimer disease, diabetes, heart problems, and even kidney failure. Basically, these little compounds cause big problems across the entire body.
But hold on. There might be hope on the horizon. A team published findings in Nature Communications that created a special enzyme designed to basically scrub these harmful compounds out of body tissues. If this method works, cells could start behaving like they did when they were younger. Researchers say this could potentially reverse some damage that aging causes.
The scientific team, led by Aaron Cravens who runs a company called Revel Pharmaceuticals, stayed careful about their claims. They said this is the first time anyone has proven at the structural level that these age related changes can actually be undone. Cravens himself called it a small step because aging is incredibly complex. No pill or treatment has managed to tackle AGEs before, so this breakthrough could open doors that were locked for decades.
